Butternut squash is my favorite fall squash. It is packed with Vitamin A, beta carotene and is a source of fiber. It can be used as a substitute in any recipe that calls for pumpkin. Acorn squash is my husband's favorite fall squash and it is just as delicious, but has a slightly different taste.

ReplyDeleteMy mother used to fix acorn squash very simply with butter, pepper, and cinnamon. She might have used some salt, too, but we were on a low salt diet. I have never been able to cook them as well as she did, but I love them. I like the acorns you show there filled with cranberries. I heard a recipe for that recently, and I can't remember it!

I love baking butternut squash either in the oven or the microwave.... put on a lot of margarine, salt and pepper.
