Homemade Breadcrumbs

Whenever I clean out my freezer, I inevitably find a few bags of bread ends that no one has bothered to finish using. Most likely that person was me, since I have this aversion to eating the end of a loaf of bread in a sandwich while it doesn't even phase my husband.

But those ends don't go to waste. I thaw them and lay them on a cookie sheet. I bake them at 350 degrees for 20-30 minutes until toasted. Allow to cool.

It's important that the bread dries out to become bread crumbs, or you'll have a big clumpy mess. Trust me, I didn't toast the bread the first time that I made crumbs and I had a big mess. You can make crumbs out of any bread really, just as long as it is dried out and/or toasted.

Once cool, I break up into small pieces and run through my food processor and pulse until the toasted bread becomes bread crumbs.


Put the crumbs in a freezer container and then store the crumbs in the freezer. I try to use the crumbs up within 6 months so that they don't become freezer burned.

One of our favorite recipes that calls for breadcrumbs is Zucchini Cakes or AKA, Zucchini 'Crab' Cakes.

To make seasoned breadcrumbs, I use 1-2 teaspoons of seasoning or dried herbs per cup of bread crumbs and mix together.

  1. That's a great idea. I have two big bags of bread heels and other dry bread that I've been saving since...well, I think since snow was flying. Suffice it to say, it's probably quite freezer burned, but I have been saving it to take a trip to a duck pond and feed the ducks.

    But in our environmentally conscious and animal-safety aware society, I feel like I shouldn't feed the ducks...even thought there are no signs telling me not to, and even though other people do.

    *sigh* I guess I'll just not feed the ducks, throw away that bread, and start a new stash of fresh old bread (you know what I mean...) so I can make some bread crumbs!

  2. Rebecca - I didn't know we weren't supposed to feed the ducks. Is it bad for them? There is a big duck pond near our house. I don't like to go there, too much duck poop, but it is a popular place to go to feed ducks. Thanks for commenting.

  3. yeah, I think that feeding any wildlife makes them dependent on humans, and then they aren't able to fend for themselves when the humans aren't around.

    I usually try to obey signs that tell me not to, so we occasionally do feed the ducks at this particular place that doesn't have signs.

    I live near Estes Park, CO, and there is a spot just before entering the tourist town where EVERYone stops to feed the chipmunks. Still, I always feel like I'm breaking the rules.

  4. I do the same thing with the breadcrumbs. I don't toast them, though. I just leave them out in the air for a few hours and they get firm enough to put through the food processor. I can't believe I ever bought bread crumbs.
