Grilled Fish Tacos


Grilled Fish Tacos

Ingredients

  • 2 tablespoon olive oil
  • juice and zest from 1 lime
  • 1 teaspoon chili powder
  • 3 garlic cloves, minced
  • 1 lb mild fish, such as tilapia
  • 4-6 tortillas or taco shells
  • your favorite taco toppings, such avocado, chopped tomatoes, shredded cabbage or lettuce, chopped onions, and shredded cheese.

Directions

1. Place the tilapia in a baking dish. Mix together the first 4 ingredients and pour over the fish. Marinate in the refrigerator for 30 minutes.

2. Pre-heat grill to high.

3. Place fish on grill and cover. Grill the fish for 2-3 minutes. Flip and grill for another 2-3 minutes or until the fish is cooked through. (I found the light fish hard to flip without breaking apart. Covering the grill plates with a piece of foil before turning on the grill would prevent this. I will do this next time.)

4. Stuff your taco shell or tortilla with the fish and your favorite taco fixins’.

How to Grill Pizza

Homemade pizza night is a big hit at my house during the colder months, but who wants to turn the oven on in the middle of summer?


So I attempted to grill it and I soon realized just how quick and easy pizza is to grill.

How to Grill Pizza


1. Preheat the grill to medium, around 400 degrees.

2. I find it easier to do the prep work inside and then take it all outside, so while your grill is heating up, roll your favorite pizza dough into pies. Instead of making one large pie, I made two smaller ones. I think they are easy to move to the grill. I have a pizza peel, but I also used the under side of an un-rimmed cookie sheet to carry the dough.

Pull together your favorite toppings. My kids requested  boring cheese pizza, so that's what you see. But you can use any toppings or creations that you like.

You'll also need a little olive oil, a grill brush, and long tongs.


3. Using a grill basting brush, carefully brush olive oil on the grill. My brush endures heat up to 500 degrees, so be aware of heat. You don't want to melt your brush.



4. Place pizza dough on the hot grill. Cover and cook for 3-4 minutes.



5. After 3-4 minutes, the dough will start to bubble and turn golden brown on the underside. You can grill the pizza longer if  you want it more crispy. Keep an eye on it so it doesn't burn.



6. Using long grill tongs, flip the dough.


7. Add your toppings to the pizza. Close the lid and grill for another 3-4 minutes or until the bottom of the pizza is golden brown. Remove pizza from grill using your pizza peel or the rimless cookie sheet.

Grilled Chicken Fajitas {Summer Grillin'}


We love Chicken Fajitas. This grilled version is very easy to prepare and was a hit with my family.

Grilled Chicken Fajitas

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 sweet pepper, core and seeds removed, cut into thin strips
  • ½ red onion, cut into thin strips
  • 6 - 8 fajita size tortillas
  • your favorite fajita toppings, such as avocado, cheese, sour cream, salsa

Marinade


Instructions

1. Pre-heat grill to high.

2. Place the chicken breasts in a plastic bag or between plastic wrap and pound the chicken with a rolling pin, heavy pan, or meat mallet until about evenly ½ inch thick.

3. Combine marinade ingredients. Place chicken in a bowl and drizzle marinade over chicken covering completely. Marinate in the refrigerator for at least 30 minutes.

4. Place pepper and onion slices on a large piece of foil. Drizzle with a little olive oil. Wrap foil up into a hobo packet. (Check out my Peppers and Onions Hobo Pack post for pictures.)

5. When the grill hits at least 450 degrees, place the chicken and the hobo packet on the middle of the grill. Close the lid. I don’t let the grill go too much over 450 degrees.

6. Cook 6 minutes and flip the chicken and hobo packet. Close lid and cook an additional 4 minutes. An instant-read thermometer inserted into the center of the chicken breast should read 155 degrees F.

7. Remove from grill and let the chicken sit for 5 minutes before cutting into. After 5 minutes, slice chicken into strips.

8. Layer the peppers, onions, chicken strips, and your favorite toppings onto a tortilla.

9. Enjoy!

Grilled Corn on the Cob with Grilled Garlic Butter {Summer Grillin'}

I grilled corn on the cob for the first time last week and it was UNBELIEVABLE. Grilling intensifies the flavor and sweetness and when you add grilled garlic butter...TO.DIE.FOR!!!

Grilled corn on the cob takes a bit longer to cook than boiled corn, but so worth the taste.

Grilled Corn on the Cob

1. Pull the husk down without removing it. Remove the silk and pull the husk back up.


2. Soak the corn in a big pot of cold water for 30 minutes.


3. Heat grill to medium, about 400-450 degrees.


4. Place corn on the grill and close lid. Cook for 15-20 minutes, turning the corn every 5 minutes.

5. Pull the husk back and remove or use it to hold the corn.



Grilled Garlic Butter
Grilling garlic is very similar to roasting garlic.

1. Cut ¼ - ½ inch off top of garlic head and remove the outer papery layers. Leave the skin on the individual cloves on the garlic.



2. Place garlic piece of foil large enough to wrap entire head of garlic. Drizzle olive oil over the exposed cloves. Wrap head of garlic tightly with foil.



3. Place the packet on the grill with the corn. The garlic will cook in 15 - 20 minutes. It is done when it can pierced pierced with a fork. Be careful not to let the garlic burn.


Once the garlic is cool enough, the cloves easily remove from their skins with a small fork or your fingers.


4. Place 1 stick of softened butter and 4 - 5 of the grilled garlic cloves in a bowl and mix with a hand mixer until creamy smooth. Slather on the grilled corn and ENJOY!

Grilled Chili Lime Shrimp {Summer Grillin'}

I hope you enjoy this week's recipe: Grilled Chili Lime Shrimp. It was voted 2 thumbs up by my family. My husband called it, "restaurant quality." So, if you're looking for a delicious recipe for Father's Day, a graduation celebration, or you just want to serve a new dish to your family, Grilled Chili Lime Shrimp will not disappoint.

Grilled Chili Lime Shrimp

Ingredients

  • 2 Tablespoon olive oil
  • juice and zest from 1 lime
  • 1 teaspoon chili powder
  • 3 garlic cloves, minced
  • 2 pounds large shrimp, deveined and peeled
  • bamboo skewers

Instructions

1. In a large bowl, mix together the first 4 ingredients. Stir in the shrimp and coat completely. Marinate in the refrigerator for 30 minutes.

2. While the shrimp is marinating, soak the bamboo skewers in water for 15-20 minutes.

3. Stick the shrimp onto the skewers. Discard any remaining marinade.


4. Preheat the grill to about 400 - 450 degrees.

5. Place the shrimp skewers on the grill and cover. Grill 2 minutes. Flip and grill another 2 minutes or until opaque.
